WHAT I LOVE: This dish adds so much variety to your meal and makes vegetables much more interesting to eat. Steaming veges ensures that vitamins and minerals are retained so your body gets to enjoy them. Raw veges all of the vitamins and minerals are retained and add the crunch factor. Roasting well this just increases the flavour and makes your taste buds tingle. Each cooking method has its pros and cons so eat vegetables in a variety of ways and to be honest the best vegetables are the ones you will actually eat.
Serve with a small side of meat or for a vegetarian option small serving of rice and beans. Make more of each vegetable so you can add to your lunches.
