Chargrilled Peaches & Quinoa Parfait
WHAT I LOVE: This was a joy to make and even more joyful to eat. A layered parfait with lovely amounts of protein, fat, fibre and caramelised peaches. Its worth doing the extra chargrilling and roasting as this is what makes the dish. Easy to make a few jars inadvance allowing the peach juice to seep through the layers. Adjust the recipe to your energy needs making it bigger or smaller or adding more quinoa and nuts.
YOU'LL NEED (2 serves)
I generally have cooked quinoa in the fridge and toasted seeds/nuts in the pantry. So whipping this up takes me no time. I have this as a morning tea, its filling as it has a mix of macronutrients fat, carbs and protein. Will keep in the fridge for 3 days. This is a great after school snack for kids, you can have it prepared and ready to go in the fridge for when they race in the door yelling I'm starving.
