 Wild Orange Snack Bites

WHAT I LOVE:  These balls of goodness were created  because I was attending a function and had to make over 300 of them.  Wow wee what a big exercise that was.  I started playing with different flavours and textures until this recipe felt like it was what I wanted.  They are easy but a little bit messy to make.  The almonds and quinoa provide great forms of protein and fats, the dates add a gorgeous sweetness with a little bit of fibre to boot.

YOU'LL NEED (15 bites @ 21gm each)
  • 1 cup of almonds
  • 10 dates pitted.
  • 1 Tbsp orange juice
  • 1 tsp cinnamon
  • pinch of salt
  • 1 tsp of vanilla essence
  • 3 drops of wild orange oil
  • 1 cup of cooked quinoa
  • desiccated coconut for rolling
 DIRECTIONS
  1. In a Thermomix or food processor blend till crumbs; almonds, dates, cinnamon & salt.
  2. Add the orange essence oil, orange juice & vanilla. Blend.  You want the mixture sticky but not wet.  So if it feels dry you can add more orange juice 1/2  tsp at a time. It can become wet very quickly if this does occur you'll need to whiz up more almonds. 
  3. Remove mixture into a big bowl and add your cooked quinoa.  Knead it till the quinoa is all mixed through.  It will feel like pastry not dry or crumbly.  If this is the case wet your hands and knead through.
  4. Roll into balls.  I wanted mine all the same size so weighed the dough at 21gms/ball and dipped into desiccated coconut.

​SERVING SUGESTIONS
You don't need to eat these every day, they are nutritious and great for you but too much of a good thing can become a bad thing.  Have one as a morning tea snack with a tea or coffee, or a pick me up before exercise. They last a week in an air tight container in the fridge or can be frozen for up to 3 months.
